If you have an abundance of fresh picked peas and cannot consume them all, you can easily preserve them for later use. Blanching and freezing are the two most popular techniques for preserving fresh Okanagan peas. Start by blanching them in boiling water for 2-3 minutes, then transfer them to a bowl of ice-cold water to stop the cooking process. Drain them and pack them in airtight freezer bags. They can be stored in the freezer for up to six months.
